Side dishes are what make roast turkey interesting on the Thanksgiving table. That's right. Vegetables in all their glory. The Pilgrims intended it to be an annual harvest celebration, after all, not just a turkey shoot and clambake on the rocky New England coast.
The adventurous will braise fennel or Belgian endive; separate tiny Brussels sprouts leaves for steaming, cut apart a giant cushaw squash to make a delectable pumpkin-pie substitute because they think the deep-orange cushaw flesh makes a better custard pie filling.
Some might opt for a European delicacy, white asparagus. Or maybe English peas ...
