MANCHEGO is a well-known Spanish cheese that is available from any good supermarket. Originating from La Mancha, the cheese was made from the milk of Manchego sheep and has a fresh, mild taste. Smoked sweet paprika adds a lovely red colour to this dish and has a bit of a zip to it. Serve these tarts with a green salad and a glass of Rioja.
Preparation: 15 minutes.
Cooking: 20 minutes. Serves 2
