Dec. 20--Trying to cash in on Americans' rekindled love affair with well-marbled prime cuts, food-service and meat-packing giants have bought up many small and midsize premium-meat processors that specialize in top cuts.
In Chicago, family-owned icon Stock Yards Packing was scooped up by U.S. Foodservice, and mainstay Bruss Co. was acquired by IBP Inc., which later was acquired by Tyson Foods Inc. Sysco Corp. swallowed meat processors in other cities, including Atlanta's Buckhead Beef Co. and Irvine, Calif.-based Newport Meat Co.
