THIS dish is very easy to prepare and can be served in its pot on the table for everyone to help themselves. Lots of people aren't sure what to do with any leftover turkey after the big day - this is what I'd do with it if I had a big family to cook for on Boxing Day.
It's a cross between traditional kedgeree and the Indian dish, biryani. I like to eat both myself and the preparation leaves itself open to many variations of ingredients - we all have these ingredients in our store cupboards anyway and you shouldn't have to go out for any special foods.
