Chicago area residents are particularly fond of fizz, ranking first in 2003 in the purchase of imported and domestic sparkling wines, about 12,400 bottles, according to the Office of Champagne, USA, the American arm of a French trade group representing Champagne growers and houses.
Joe Kafka, owner of Kafka Wine Co., said the appeal of sparkling wine is obvious. "It is definitely a celebratory thing," he said. "One of the driving factors for buying sparkling wine is it is bubbly. It's fun to watch the bubbles, you get to drink it in pretty flutes."
Don't let the bubbles fool you; sparkling wine is very serious stuff.
