Bartlett pears mostly disappear by the New Year. Winter varieties of pears are grown in the Northwest. Comice, Anjou (red or green) and Bosc pears are like beautiful bells displayed in a ripening bowl.
You must keep apples refrigerated or they become mushy, so they're not a suitable centerpiece. But pears have to be ripened off the tree, at room temperature, so it works out for display purposes. There's something "arty" about pears anyway, and they make sophisticated salads after serving as an artful centerpiece.
When pears yield to gentle pressure at the stem end, they're ready to eat as is or be used in recipes. In ...
