crispy duck breasts
with tart cherry sauce
2 small duck-breast halves
(about 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup Port wine
1 can (14 1/2 ounces) tart
cherries in water, well drained
2 tablespoons sugar
White and wild rice blend
Steamed green beans
1. Pat breasts dry with paper towels.
Cut diagonal slashes at 1/2-inch
intervals (about 1/4 inch deep) in
duck skin. Place breasts, skin side
down, in nonstick 10-inch skillet;
sprinkle with salt and pepper.
Cook over medium heat 12 minutes
or until skin is deep brown;
turn breasts over and cook 3 minutes
