Roasting tomatoes enhances their taste hugely, especially at this time of the year when, let's face it, they are not at their most flavoursome.
Cooked this way, I find tomatoes go with almost any meat, so lamb, veal or chicken will work just as well. I like to serve this dish with sauteed potatoes and a large glass of chilled white wine.
8 plum tomatoes 1 teaspoon caster sugar Maldon sea salt Freshly ground pepper Extra-virgin olive oil 4 cloves garlic, peeled 2 small red onions, chopped A handful fresh basil leaves, torn 4 pork cutlets
