Prep time: 10 mins. Cooking time: 30 mins. Makes 6 LAST month, we held a muffin competition at the cookery school in aid of Childline. There were a large number of entries from all our students but this was deemed the best by the staff.
INGREDIENTS 170g/6oz plain flour 11/2 tsps baking powder 70g/21/2oz caster sugar Finely grated zest of 2 lemons 125ml/4fl oz milk 1 egg, beaten 50g/13/4 oz butter, melted and cooled 2 tbsp lemon curd 1/4 tsp vanilla essence 55g/2oz good-quality cream cheese 20g/ 3/4oz icing sugar FOR THE GLAZE: 21/2 tsp lemon juice 55g/2oz icing sugar, sieved
