Apr. 3--Winter wheat could be a cash crop for north country farmers, as a processor in Essex County has a market.
"Sales of organic flours are growing 15 to 20 percent annually," said Sam Sherman of Champlain Valley Milling, Westport, in a statement. "We could use 6,000 acres worth of winter wheat grown in Northern New York."
Mr. Sherman processes his own organically-grown winter wheat and buys grain from the Midwest, West, Saskatchewan and two New York farms. He is adding grain bins and bulk flour storage at his mill and plans to start a campaign to interest farmers in the region to grow winter wheat.
