PETALUMA, CALIF. -- Cheesemaker Jim Boyce leaned across a counter, eyes sparkling as he plunged a knife into the thick, yellow creaminess of one of his choice bries.
"This is the cheese that bested the French," he said with quiet pride.
Boyce's triple cream brie took gold at the World Cheese Awards in London this spring, winning top honors in a category historically dominated by France, home to the region that gave the cheese its name.
The victory is the latest in a series of awards for California and U.S. artisanal cheeses -- and a far cry from the days when "American cheese" might conjure up ...
