Cerestar Food and Pharma Specialties Europe, a business unit of Cargill Inc, has launched a range of functional soy products for the bakery market, following last year's announcement that the firm had expanded its portfolio with soy products. The flours in the range include a whole-bean full-fat soy flour, including soy grits and the toasted and enzyme active soy flour, defatted soy flour and textured soy flour. The company has also made its patented protein-rich, flavor-neutral Prolisse soy isolate available to bakery manufacturers.
