IN MY younger days as an apprentice chef I spent many hours working in the cellar of Sharrow Bay's kitchens, not that they put me down there to get rid of me but it was the coolest part of the building, ideal for pastry We used to make the most fabulous croissants for breakfast, brioche to toast and wonderful puff pastry that went with many dishes. One of the jobs that was designated to myself was to make biscuits for the cheese board and canapes.
