My wife and I have made a life change similar to what Terry and Corey Michaels seem to be contemplating. My wife worked as an executive secretary and I was part of an engineering department for a Fortune 500 company. We had considered and discussed a change, and I finally made the decision when it became apparent I would be "downsized." Picking an area of the country to go to is consideration number one. You must be familiar with it or at least understand the climate and how it can work for or against you. Look into rainfall (when and how much), expected minimum and maximum temperatures, and daily extremes likely for that region. I can't expect to grow dry land alfalfa ...
