Australian manufacturers have responded to rising demand for low-fat dairy products. Tony Telgenhof, the sale manager at Parmalat Australia, says many chefs are using organic, low-fat dairy products. Dairy Farmers has developed the world's first low-fat mozzarella and cholesterol-free milk. Dairy Australia calculates that in 2003-04, dairy product sales of the foodservice sector rose by 5.2 per cent, to nearly $A742 million. Kevin Birger, the MD of The Ice Cream Factory, notes that eating a moderate amount of dairy products is not harmful.
