There was a time when people in southern Wisconsin could waltz into one of the little cheese factories sprinkled across the rural landscape, go back among the vats, chat with the cheesemaker and scoop out a handful of very fresh curds.
Those little factories are much less common now and food-making regulations have tightened, but there are still opportunities to witness the miracle of milk becoming cheese.
