GILROY, Calif.--Jul. 8--When Caryl Simpson commissioned a mural celebrating Gilroy's most famous commodity for the side of downtown's old J.C. Penney building, she took a single step toward what she calls the "garlicization of Gilroy."

Simpson believes businesses all over the city can benefit from capitalizing on the garlic theme, and thinks more should be done to make Gilroy a tourist destination all year long - and not just during the Garlic Festival.
