O MUCH for scouse and Lancashire hotpot. An Eccles cake made with Lancashire cheese, apples, pears and currants was yesterday hailed the new signature food of the North West.
The sweet snack won first prize in a competition to create an innovative recipe to champion locally-produced fresh cheeses, vegetables, fruit or meats.
Celebrity chef Paul Heathcote presented the North West Food Innovators award, in Liverpool's Anglican Cathedral yesterday.
