One of the leading bellwethers of food fads, trends and funkiness is the annual Natural Products Expo West trade show, held in Anaheim, Calif., during the early spring. It has grown to fill the recently expanded Anaheim Convention Center, elevating it to one of the food industry's premiere events, with 2,590 exhibits and 38,000 attendees from 83 countries. Not that organic foods are a new phenomenon; they've been slowly proliferating for almost two decades. No, the hit-you-over-the-head impression is that organic foods have finally and fully engaged the mainstream consumer and are rapidly reshaping both mainstream CPG companies and food retailing.
