Winemaking for table wine is not color-blind anymore, according to Michel Salgues, Ph.D., former winemaker at Roederer Estate in Mendocino County's Anderson Valley. Salgues consulted on the development of the new Bucket press from Coquard Presses, which has supplied wine presses in Champagne since 1924. He is now Coquard's exclusive independent agent for North America.
Salgues' involvement was a key factor in the buying decision of one of the Bucket's first purchasers. Douglas Stewart, a novice winemaker who is building a new winery in Anderson Valley, noted, "He has left an enormous footprint in this valley .... We bought the theory and made a leap of faith."
