I RECKON all cooks should have a wok in their cupboard, as they cook food quickly and efficiently.
This is the kind of dish that is prefect for using any leftovers in the fridge. You can add tomatoes and, if you don't have any spring onions, use red onions instead.
Swap olive oil for sesame oil and add a dash of soy sauce if you wish.
