Although cheese offers plenty of good nutrition, it's naturally high in fat and calories because it's made from whole milk. Most natural full-fat cheeses pack about 70 percent of their calories from fat--about eight or nine grams of fat per ounce. In the past few years, however, new cheesemaking techniques have brought forth new varieties--all lower in fat and calories-made from low-fat and skim milk. Most have added gums and stablizers to simulate the texture and taste of a full-fat cheese.
