The increased popularity of specialty cheeses, with several hundred varieties, is bringing a new look to dairy and dell cases, where retailers are presenting broader assortments in those departments along with cheese islands, pegged displays and cross-merchandising programs that position baskets of assorted cheeses in the fruit and salad sections.
