In a traditional deli setup, luncheon meats, cheese loaves, and logs have carried a pretty similar weight, at least figuratively. As meat and poultry offerings have grown, so too have the available varieties of cheeses. And just as retailers are working both sides of the business by offering grab-and-go portioned deli meats near the service case for shoppers who would rather not wait in line, pre-sliced deli-style cheeses in resealable packages are hanging on pegboards in stores across the country.
