POTATO SALAD, A staple at summer cookouts and a requisite "side" with sandwiches year-round, is as American as apple pie.
Ironically, it's not particularly American.
That is, like most of our foods, this cornerstone of "American" cuisine has roots in Europe. There, Spanish explorers, fresh from South America, introduced potatoes in the 16th century. Potato salad recipes were soon to follow.
Creamy and tangy with mayonnaise, hard-boiled eggs and sweet pickles, the American version of this un-salad-like potato dish, which became synonymous with the backyard ...
