Manual or automatic? In the end, say espresso machine manufacturers, retailers must make their choice: whether to sell the quality of a hand-made beverage or opt for the efficiency and consistency of automation.
The opinions of manufacturers and importers of espresso machines vary, however, on whether specialty coffee retailers in the United States are trending toward manual or automatic equipment.
"The trend is definitely toward superautomatic machines," advises Umberto Terreni, managing director for Astoria-General Espresso Equipment Corporation of Greensboro, N.C., a subsidiary of the Italian manufacturer CMA.
