ADAPTED from Dough by Richard Bertinet (Kyle Cathie, $30).
BASIC WHITE BREAD DOUGH
About 4 cups bread flour
2 teaspoons fresh cake yeast
2 teaspoons fine sea salt
1 1/2 cups water, room temperature
Place 3 3/4 cups flour in bowl of a standing
mixer. Rub yeast into flour with fingertips
until mixture is the consistency of large
crumbs. Switch mixer onto the slowest
speed, and add salt and water. Mix for 2
minutes. Turn up to the next speed and
mix until dough becomes smooth and
elastic, about 6 to 7 minutes.
Lightly flour counter. Place dough on
top and form into a ball. Knead dough,
