TO MARK the middle of British food fortnight, I've chosen a dish made with essentially English ingredients. Red cabbage brilliantly absorbs the flavour of the other ingredients, and the apple and brown sugar complement it perfectly.
Cumberland sausages are made from coarse-cut pork and are quite spicy.
Serve this dish with buttery mashed potatoes and a glass of beer.
