Beans are taking a star turn as the health food of the '90s. These humble seeds of leguminous plants are being served in elegant entrees and side dishes in restaurants across the country. According to the USDA, bean consumption rose 40% between 1989 and 1991. That's great news, because beans have a lot to offer.
