YWEL James was five when he rustled up his first dish under the watchful eye of his mother. The rice pudding was made with freshly churned milk and cream he collected from the dairy at the family's Pembrokeshire farm, and baked in the Aga.
When it emerged from the oven, perfectly browned and creamy sweet, it was wolfed down up by the farm's hungry workforce.
"Whenever my mother was away from the farm I would cook for them in her place after that," he says." Today Hywel is lucky to rub shoulders and clean plates with some of Wales' finest chefs, as well as the producers responsible for the all important ingredients.
