Catering to overscheduled families, a new type of business has mushroomed around the country, a kind of kitchen on the run.

One such enterprise is Main Dish Kitchen, which has grown in one year from a single store in Holland, Mich., to 13 franchises in eight states, including one that opened earlier this month in Middleton. Next up is Super Suppers, coming to Middleton's Greenway Station early in 2006.

The format of these meal-preparation enterprises is similar to others around the country, such as Your Second Kitchen, Supper Thyme, Dinner Works, Dinner's Done and Dream Dinners. Customers assemble ...
