I don't consider myself religious, but I am spiritual. I celebrate Hanukkah by making traditional holiday foods, which I feast on with my family. I am not such a traditional guy either, especially when it comes to my cooking. For years I've been preparing some enlightened versions of old family recipes. I'm not trying to break tradition, but merely attempting to lighten up on the fat and oil, which is very much a part of potato pancakes, or latkes, that always appear on the Hanukkah dinner table.
