Article: Cheese plant sparks dairy boom.(Hilmar Cheese Company Inc. builds a cheese plant in Dalhart)

STATE, local and community leaders cheered Hilmar Cheese Co.' announcement that it will build a new cheese plant in Dalhart, Texas, as it will bring thousands of jobs--and dairy cattle--to the region.

Construction on the plant will begin early next year. The first of two phases is expected to be completed by the end of 2007 and will employ 120 people.

That's just the tip of the iceberg, though, as the number of dairy cows in the nearby area will need to more than double by then in order to support the amount of milk the plant will need, said Dr. Angela Daniels of Circle H Animal Health LLC in Dalhart.
