Dec. 28--IF A VEGETARIAN organic winter harvest meal brings to mind a quivering block of tofu topped with sprouts and piles of pressure-cooked brown rice, think again.

The table at a recent vegetarian cooking class was laden with vibrant red peppers and green brussels sprouts and all the ingredients to make an eclectic, healthy winter meal.
