Boozy spotted dick with caramel sauce

Preparation time 20 minutes. Cooking time 2 hours. Serves six.

THIS is definitely a pudding for a cold wintry evening. It is rich, dense and boozy and should be served with plenty of custard. Note that you could soak the fruit for a couple of hours in the calvados before assembling the pudding.

Knob of butter 225g/8oz self-raising flour 1/2 tspn salt 1 tspn ground mixed spice 1 tspn ground cinnamon 1/2 tspn ground cloves 75g/21/2oz caster sugar 45g/11/2oz sultanas 45g/11/2oz raisins 45g/11/2 dried apples, chopped 4 tbspn calvados 125g/41/2 shredded suet ...
