Jan. 20--WASHINGTON -- When the price of a gallon of milk climbs in Northern New York, the first place to look for reasons may be 600 miles away -- in Chicago.

That's where 40-pound blocks of cheddar cheese are traded at the Chicago Mercantile Exchange, the beginning of a complex system that determines the price of milk in the supermarket and how much farmers around the country are paid for milk.
