New combos put pasta elbow to elbow with fruit, grains and beans.
Whoever first served pasta chilled--inventing the pasta salad--has a lot of loyal fans. Among them, R&I found one chef who says pasta salad orders are skyrocketing in the appetizer category. Another says pasta salads have a lock on the lunch crowd. And two more have married Italy's staple starch with specialties of Spanish and Lebanese cuisines.
Alongside contemporary combinations are familiar pasta recipes that find new menu outlets, for example, pasta's traditionally hot Alfredo sauce with a lower temperature for pasta salad.
