The name doesn't sound exotic like "tilapia" or invoke images of gourmet preparations like grouper, but catfish is, perhaps, a better option when it comes to putting dinner on the table.
Not only do farm-raised catfish fillets generally carry a lower price tag at the fish counter, but they are an abundant and environmentally friendly species.
"U.S. farmed catfish is a good, ecologically responsible fish," said chef Ted Cizma with the Shedd Aquarium in Chicago, a big supporter of sustainable aquaculture. "It's harvested in a responsible manner."
