Michael Bavota knows seafood. During his 30-plus years in the industry as a retail buyer and merchandiser, wholesale buyer, chef, freelance writer and cookbook author, Bavota has devoted himself to educating others about seafood. His latest venture is as a seafood buyer with AGAR Supply.
He started work at the independent broadline distributor in Taunton, Mass., in fall 2005. The family-run company was founded more than 60 years ago by Karl Bressler, who sold meat to restaurants in Boston's Chinatown. Karl's son, Alan, built AGAR into the largest meat distributor in New England.
