AS CONTROVERSY rages on over whether oily fish is indeed the ultimate health panacea, it can do no harm to indulge in a little smoked salmon. If the rich fish oils it contains are so good for us, there can surely be no more palatable way of eating healthily.
Smoked salmon is one of those foods that have gone from a luxurious extravagance to commonplace and back again. In the Sixties it was the starter of choice in clubland and in smart restaurants.
Then, as more salmon farms opened up during the Seventies and Eighties, extra supplies of smoked salmon hit the market - driving the price down.
