Finding ways to breathe new life back into the cottage cheese category has become a burning crusade for the industry's leading cottage cheese manufacturers. The cause even prompted the International Dairy Foods Association's Milk Industry Foundation (MIF) to organize the Cultured Products Committee last fall. Already, the committee--comprised of leading cottage cheese manufacturers representing 85 to 90 percent of the market volume, has identified some key short- and long-term strategies to initially stabilize and then begin to grow the category.
