Sorrento Cheese Co. Inc., Buffalo, N.Y., values the pit brine system it has installed by SMS/Nelles Cheese Equipment almost a year and a half ago for several reasons. Improved cheese quality, increased cheese yield, reduced plant space dedicated to equipment and increased staff efficiencies are just a few.
Sorrento uses the pit system for its bulk items; 5-pound mozzarella, and 6- and 12-pound provolone. Sorrento processes about 100,000 pounds of cheese in the pit daily.
