One of the great surprises I have had since arriving in Cardiff last year has been the stunning array of Welsh cheeses.
The tradition of Welsh cheese-making is growing all the time. Twenty years ago there was very little available but today there are some very fine cheeses being made in Wales.
Of those that we are delighted to offer at the St David's Hotel & Spa, a number stick out for me, both for their flavour and for their reliability, which of course is vitally important for any restaurant such as Tides at the hotel.
