A COALITION of Chicago, Ill., chefs and restaurateurs has come together as Chicago Chefs for Choice in the aftermath of the Chicago City Council's ban on serving foie gras at city restaurants.

Chicago Chefs maintained that a ban on a food product with regulatory agency approval denies chefs and consumers freedom to choose foods they want to put on menus or order, and a number of restaurants are asking customers to sign a petition expressing opposition to the law.

The ban, which also prohibits supermarkets from carrying foie gras, was pushed by the Humane Society of the U.S. (HSRC.
