Once pooh-poohed as the province of hippies and granola-eaters, vegetarianism may be moving into the mainstream as Americans discover the extent to which we are what we eat.
The attention now being paid to how diet affects health is seen as a step in the right direction by Steve Kochersperger, president of the Vegetarian Society of Central Pennsylvania.
While critics of vegetarianism contend that eliminating meat from the diet is dangerous to health because it removes a good source of protein and iron, ``the real risk,'' Kochersperger said, ``is continuing to eat like the average American.''
