FOR 10 months of the year, you forget how good English strawberries are. My expectations are not particularly high when I purchase some bright large berries in December but, as the sun starts to shine, there is an abundance of European countries importing - none are finer than the British berry when in season.
This is a great recipe - the mint and honey are a wonderful combination, and the fluffy ricotta cheese pancakes make a simple dessert.
MINTED STRAWBERRIES WITH RICOTTA PANCAKES Ingredients (makes 4)
500g strawberries, halved
40g caster sugar plus extra for serving
1 dsp honey
