Not long ago, if I mentioned soy milk, people cringed and told me how awful it tasted. They might have been right back then, as I remember it having a strong soybean flavor that overpowered anything served with it. Back then, soy milk was merely a beverage. You had your choice of regular or, well, regular.
Things have changed.
Soy milk is made by soaking and then grinding soybeans with purified water. The resulting liquid is soy milk. New processing methods have reduced the really beany flavor that soy milk used to have.
