Possibly fuelled by the cheese and wine parties of a bygone era, it is one of the great myths of food pairing, that cheese and wine are an ideal marriage.
There is little argument regarding the classic matches of Port and Stilton and Roquefort with Sauternes, but a recent Californian study that concluded that red wine does not go with cheese, or at least soft cheese, is not as daft as it seems. Firm tannins can clash with the texture of the cheese. This style of wine, such as Bordeaux, is best suited to hard cheeses.
