Cropwell Bishop Creamery in Nottinghamshire is a relative newcomer to exporting.
After years of declining Cheddar sales, the cheesemaker decided in the 1990s to focus exclusively on Stilton. That decision has reversed the fortunes of the family business behind it, says joint MD Ion Skailes.
The range has grown from the core traditional Blue Stilton to include organic Stilton, flavoured Stilton and Blue Shropshire. "We export 39% of our production, mainly to North America but also to the For end Middle East."
The bulk of production is still sold in the UK through Waitrose, Harrods, Fortnum & Mason and other upmarket delis. Exports to North ...
