Mature and farmhouse Cheddar has been hogging the marketing limelight in recent years, but milder cheese is beginning to fight back.
Cheese experts have in the past compared mild Cheddar unkindly to a bar of soap in both texture and taste, and this bad press has been acknowledged by today's manufacturers.
They are changing all this by bringing a better flavour to the category. Cheesemakers have realised there are plenty of consumers who prefer a smoother taste and are rebranding mild Cheddar to emphasise texture and quality.
